In keeping with the philosophy of Il Borro, the Estate’s cuisine, under the guidance of Executive Chef Andrea Campani, is directly linked to the idea of respecting the territory, where the quality and freshness of ingredients are the very foundation of menus devoted exclusively to exalting Tuscan excellence. Special attention is paid to ingredients, always fresh and seasonal, such as vegetables that come from Il Borro’s organic garden or meats, cheeses, and fish that are sourced from carefully selected local producers. The three restaurants are Osteria del Borro for fine dining, the Tuscan Bistro, and the Pomario pizzeria. Three bars include Vin Café at the Medieval Village, the Borro Bar in the Courtyard area, and the Pomario in the Countryside area.
