Featuring modern brasserie classics and an extensive wine list, the menu celebrates the best in Australian produce, highlighting small-batch farmers and growers, with cooking methods drawing upon age-old techniques such as curing, smoking, fermenting, preserving, and pickling. Brasserie 1930 is open for breakfast, exclusive to in-house guests, from six-thirty in the morning until ten at night, and to the public from Tuesday to Saturday for lunch from noon to three in the afternoon and for dinner from six to ten at night. The Bar serves famous cocktails from "The Magnificent Twelve," a period of time between the mid-nineteenth century and mid-twentieth century, when a curated selection of cocktails was meant to cater to every taste.
