Francatelli was a celebrity chef of his day, who left St. James Club to be Queen Victoria's chief chef, and authored a cookbook, "The Modern Cook," in 1846 that inspired the menu of Francatelli's at St. James Hotel & Club in 2024. The menu is rooted in simplicity and British produce, punctuated with some show-stopping dishes.
