Baja’s seasonal bounty meets Mexican, Italian, and Japanese culinary traditions.
Aman’s first resort in Mexico is also set to become an epicurean destination on the East Cape. Led by Executive Chef Daniel Camacho, dining across Amanvari celebrates both the seasonal bounty of Baja and Aman’s global culinary outlook. Luma draws on Mexican coastal traditions and elemental open-fire cooking, while Arva, Aman’s signature Italian concept, centers on fresh, seasonal ingredients served around a convivial table overlooking the Sea of Cortés. Sesui brings Aman’s Japanese dining concept to Baja with an intimate ten-seat traditional omakase experience led by a Master Sushi Chef. At The Pool, daybeds, cabanas, and poolside service set the scene for feet-in-the-sand dining beside the Beach Club.
The Lounge Bar evolves from day to night with views of the Sierra de la Laguna mountains and the sea. Ideal for pre- and post-dinner drinks or a leisurely afternoon refreshment, the menu pairs signature mixology rooted in local ingredients with low-ABV and alcohol-free creations, botanical elixirs, and thoughtfully crafted light bites and sharing plates.
