Seasonal Venetian cuisine.
At Ca' di Dio, everything begins with seasonality, with each menu drawing inspiration from the colors and produce of the moment, delivering simple preparations that let the quality ingredients speak for themselves. Decisive and natural flavors are championed in the kitchen, enhanced by technical skills, constant research, and a respect for tradition. Breakfast is served in the inner courtyard of the ESSENTIA restaurant, shaded by mimosa trees and also offering a chance to dine alfresco at dinner during summer. For dinner, Vero restaurant overlooks the waterfront with an enchanting view of the Venetian lagoon and the island of San Giorgio Maggiore, offering "Respectus" cuisine – traditional local dishes skillfully reinterpreted with a contemporary touch.
Alchemia Bar occupies the inner rooms of the historic building, its original elements preserved alongside a wide selection of drinks, from international classics to Venetian wines and aperitifs, masterfully reinterpreted by expert bartenders. Ca' di Dio's exclusive house gin, distilled by master distiller Zu Plun in collaboration with The Merchant of Venice, comes in three varieties: Sàl, a lagoon-inspired gin from salt; Blue Tea, a nod to Venice's long history of cultural exchange with the East; and Rosa Moceniga, drawn from the essence of a rare ancient rose rediscovered in the secret gardens of the lagoon. Don't miss the signature Casthigo cocktail, a local and territory-driven creation served old fashioned style with mais and turmeric chips.
