A brasserie rooted in Parisian haute-bistronomy
James Joyce once lived at the Pavillon Faubourg Saint-Germain, and it's in homage to his book "Dubliners" that the hotel's restaurant takes its name, Les Parisiens. It's the latest project from Chef Thibault Sombardier, a leading figure of Parisian haute-bistronomy, and Executive Chef Matthieu Pirola, the two chefs creating a menu of accessible and seasonally-driven recipes, simple in appearance but precise in execution. The wine cellar is equally considered with biodynamic estates, plot-based vintages, and fine references from the great French appellations sitting alongside champagnes from both growers and grand houses.
The bar at Pavillon Faubourg Saint-Germain also pays tribute to former resident James Joyce, this time with a distinctive design that emulates the warmth of an English club. Yet it's also an unmistakably Parisian space, open to the neighborhood rather than reserved for hotel guests alone. Signature cocktails by the in-house mixologist, and an atmosphere that makes it equally easy to linger over an afternoon drink or lose track of the evening entirely.
